Roasted Marinated King Prawns

This recipe for Roasted Marinated King Prawns serves 4.

12 raw large king prawns, unpeeled, halved lengthways & deveined
1 small handful sage leaves
1 small handful oregano leaves
1 small handful coriander leaves
1 small knob ginger
1 garlic clove
2 dried long red chillies
Finely grated zest & juice of 1 lemon
125ml extra virgin olive oil, plus extra for drizzling
Sea salt & freshly ground black pepper
1 small handful flat-leaf parsley leaves, chiffonade
Lemon wedges, to serve

 

Arrange prawns, cut side up, on a tray.

Preheat oven to 250°C or BBQ grill plate to hot.

Finely chop herbs, ginger, garlic & chilli. Combine in a bowl, add lemon zest & olive oil & season to taste with salt & pepper. Spread marinade over pawns. 

If using oven, roast prawns for about 5mins, or until cooked through.

If using a BBQ, place the prawns cut side down on BBQ & cook for 5 mins, pressing down on prawns to caramelise flesh.

Remove from oven or BBQ, squeeze over lemon juice to taste & season with salt & pepper.

Drizzle with olive oil, sprinkle with parsley & serve with lemon wedges.
