Executive Chef Santiago Aristizabal and his team butcher in-house. Sitchu observed that “everything is butchered in-house, so the selection shifts with what’s at its peak.” Cape Grim rib-eye, sirloin and t-bone are cooked over a wood fire, each one marbled and full of flavour.
The wine list is managed by knowledgeable sommeliers. The bar is worth knowing about. The wagyu burger, layered with Gruyère and smoky bacon, is available without a dinner booking. The crème caramel is a clean, classical close to the meal.
