Hailing from the vibrant city of Medellin, Colombia, Chef Aristizabal’s journey began with a serendipitous introduction to the hospitality industry through his circle. Recounting his formative years, he reminisces, “I had a couple of close family members and friends who were in the industry, so it felt like a natural progression for me.” This ignited a passion that led him to pursue formal culinary education in Colombia before embarking on a global expedition across Canada, and the Intercontinental Group in Sydney and London.
It was in Sydney, amidst the bustling culinary scene, that Chef Aristizabal’s ascent began. He joined Rockpool Bar & Grill in 2010, initially assuming the role of Junior Commis Chef. He found that the ethos of Rockpool resonated with him. “It’s probably my South American background: I just fell in love with the woodfire grill,” he explains. “I also resonate with the restaurant’s philosophy of paying respect to the produce.”
Renowned for his skill in crafting exquisite dishes, Chef Aristizabal’s dedication also extends to sourcing the finest produce from across the country. “From farm to table, the experience at Rockpool is unlike anywhere else,” he asserts, emphasising the restaurant’s commitment to quality and innovation.
At the heart of Chef Aristizabal’s culinary journey lies a profound reverence for tradition. Reflecting on his tenure at Rockpool, he attributes his growth to the invaluable mentorship of renowned chefs who have shaped his culinary identity. “I have been very lucky to work with some great chefs that have been my mentors all these years, and continue motivating me to be a better chef and leader.”
