Rockpool Bar & Grill, Krug take Fried Chicken Sandwich to the extreme
Tuesday, 1 June 2021: Rockpool Bar & Grill is taking the humble Fried Chicken Sandwich to the extreme, pairing its signature buttermilk brined version with a glass of Krug Grande Cuvée for $85 per person for the next two months.
Rockpool Bar & Grill Sydney, Melbourne, and Perth are offering the luxurious pairing from Tuesday, 1 June to Saturday, 31 July, in the bar at each location. (The offer will start in Melbourne once the lockdown is lifted.)
Focusing on high-quality ingredients and house-made craft, Rockpool Bar & Grill’s flavour-packed Fried Chicken Sandwich features a house-made bun dressed in salted chilli mayonnaise (the salted chillies are borrowed from sister restaurant Spice Temple, where they are made on site), which is layered with lettuce, house-made pickles, and a generous piece of chicken tossed in a native pepper spiced batter.
The upscale version of the ubiquitous fried chicken sandwich is crowned with a single, crisp onion ring beneath the soft bun lid.
Each year, the House of Krug chooses an ingredient to feature in its single ingredient program and invites chefs to create recipes around this ingredient to pair with Krug Grande Cuvée. This year, it is the unassuming but all-important onion.
Rockpool Bar & Grill is well known for the super-crisp, exceptionally large, addictively good onion rings on its bar menu, which Executive Chef Corey Costelloe says are the ultimate addition to the newly created Fried Chicken Sandwich.
“The sweetness of the crisp onion ring balances the subtle spice of the chicken and adds exceptional crunch to the sandwich, which is complemented by the fruit-driven Champagne,” Chef Corey says.
Krug Grande Cuvée is also pouring by the glass at each location for $80 per pour.
The Fried Chicken Sandwich is available for $16, minus the Krug match.
